After seven years of award winning and successful operation, the Willow Stream Spa received a 2.3 million dollar facelift in the Fall of 2003. This renovation enables the Willow Stream Spa at The Fairmont Banff Springs to stay at the forefront of the spa industry, offering first class pampering surrounded by majestic mountain beauty. This renovation captures the spirit and ambience of the mountains and reflect the image and elegance of the newly restored Fairmont Banff Springs. Our breathtaking Spa is now 38,000 square feet and completely refurbished.  

Fairmont View Room : Identical in layout to Fairmont accommodation, Fairmont View rooms feature the same charm.  Conveniently located throughout the resort, these rooms are complemented by spectacular views of the Bow Valley, Spray Valley or Tunnel Mountain.

Signature Room : Elegantly decorated, Signature rooms are reminiscent of the grand era of travel. These exceptional rooms feature distinctive architectural details such as ornamental fireplaces, crown molding, ornate chandeliers, and artwork depicting the heritage of the hotel. Located exclusively in the Main Building, Signature rooms feature picturesque  valley views.

Suite/Speciality Room

Junior Suite : Suite dreams! Treat yourself to an extraordinary experience in a spacious, open concept Junior Suite. Waldhaus Pub : Located beneath the Waldhaus Dining Room is Banff's best kept secret - the Waldhaus Pub!  After an invigorating day of activities, tantalize your taste buds while enjoying the relaxed atmosphere at the Waldhaus Pub.  This unique pub offers a cozy venue with a dart board, several televisions, a pool table and multiple offerings of locally brewed bottled beer as well as beer on tap.  Enjoy a great pub menu consisting of nachos, wings, fish & chips and calamari.

Banffshire Club : Join Chef Daniel Buss for a remarkable evening in our intimate and exclusive Banffshire Club. This elegant and luxurious haven offers contemporary North American cuisine featuring the freshest ingredients prepared in a most innovative fashion.

A fine selection of single malt scotches combined with one of the most extensive wine cellars in Canada will complement your menu selection and enhance the evening. At the Banffshire Club you will be charmed by the atmosphere. Vaulted ceilings and painted frescos, set against a warm backdrop of rich oak panels and wainscoting instill a sense of grandeur. Windows overlooking Sulphur Mountain are draped in the Malcolm tartan. High-back chairs and antique reproduction tables of the Stuart period, set with fine linens, delicate bone china and crystal invite you to dine like royalty.

If your party wishes a unique private dining experience we offer the intimate and charming wine room. Eight guests can dine at a large trestle based table surrounded by the Banffshire Club's extensive wine collection.

Bow Valley Grill : When you dine at the Bow Valley Grill, you'll savor the finest and freshest seasonal cuisine, while overlooking the Fairholme Mountain Range. The unique 50-ft. open kitchen provides an opportunity for you to interact with our talented chefs while your meals are being prepared.

Golf Course Clubhouse : Situated in the heart of The Fairmont Banff Springs Golf Club, The Clubhouse Restaurant is the perfect place to tee your afternoon off with a great meal. With views of the celebrated Stanley Thompson fairways, luminous rivers and unforgettable mountains, the Clubhouse is an ideal venue for a meal and a sanctuary from stray balls.

Our Stanley Thompson Luncheon Buffet presents a variety of luscious fare and our a la carte menu lunch menu will meet your culinary needs. 

A shuttle service is available between the hotel and the Clubhouse, and leaves every half hour (on the hour and half hour) from the hotel's main entrance.

Grapes Wine Bar : Guests have the opportunity to enjoy extraordinary wines from Canada in The Fairmont Banff Springs Wine Bar. Select your favorite wine from an immense collection of superior labels renowned for their inspiring sense of balance and outstanding finish. Chef's Biography : Executive Chef Martin Luthi -- 'King of Cuisine'
A diversity of cuisines and international recognition mark the numerous restaurants of distinction at The Fairmont Banff Springs. Executive Chef Martin Luthi, with 30 years of experience, orchestrates culinary feats, including superb banquets served in luxurious surroundings and with undeniable panache.

Born in the small town of Brugg (Canton de Aargau), Switzerland, Chef Luthi started as an apprentice cook at the age of 17, in a small lakeside resort. He went on to learn the traditional French and Swiss cuisines at restaurant Le Dezaley, in Bern, Switzerland. Chef Luthi later joined the Bellevue Palace of the famous Swiss chain of Palace Hotels.

His career flourished and he was consequently employed as a Chef Rotisseur and Chef Gardemanger at the Hotel Intercontinental, Geneva. But over time, a craving for travel consumed him and he cruised the world as Chef de Partie with the Holland-America Line.

In 1974, he came to The Fairmont Banff Springs, and later took the title of Executive Chef in 1980. Since then, The Chef, as he is better known, has trained many young apprentices. He supervises a staff of 132 chefs and a kitchen crew of 104. For 14 years, Chef Luthi has led The Fairmont Banff Springs' three year culinary apprenticeship program, which teaches participants from around the world.

'It is essential, in this fast-paced environment, to be surrounded by a professional, dedicated team,' believes Luthi. 'I am fortunate here to be surrounded by people who share a genuine love of the kitchen.'

There are 10 kitchens and 12 food and beverage outlets that prepare meals for 1200 guests in the 770-room hotel. This adds up to a mind-boggling 4000 to 6000 meals per day or 1.3 million meals per year.

Cedar Plank Salmon, fresh salmon marinated in whisky and baked on a cedar plank, is one of Chef Luthi's signature recipes.

Chef Luthi's creativity and organizational skills have brought him international recognition. He has thrilled the palates of kings, queens and famous personalities from around the world.

Samurai Sushi Bar and Restaurant : Experience a true taste of Japan at the Samurai Sushi Bar and Restaurant.  You will find the freshest and finest sushi and sashimi in town as well as interactive Japanese hot pot dinners such as shabu-shabu, sukiyaki and yosenabe in an authentic Japanese surroundings.
