The fabulous breakfast buffet is offered daily, and the a la carte menu is always a favorite. Located on the 3rd floor, Diamond Head Tower. Cuisine: a la carte. Opening Hours: breakfast from 6am-11:30am, lunch 11:30am-3pm, and dinner from 3pm-6pm.

COLONY, A mainstay at the Hyatt since the hotel opened in 1978, the Colony offers award-winning fresh lobster, fish and USDA prime cut-to-order steaks grilled to perfection over an open kiawe wood grill. Located on the 2nd floor, Diamond Head Tower. Cuisine: Seafood/Steaks. Opening Hours: 5pm to 10pm daily.

MUSASHI, Serves three kinds of authentic Japanese cuisine- MUSASHI, Serves three kinds of authentic Japanese cuisine- teishoku (sit down), Teppanyaki (grill), and sushi. The Japanese outdoor garden makes the perfect backdrop for dinners in the plush restaurant setting. Located on the 3rd floor, Diamond Head Tower. Cuisine: Japanese. Opening Hours: Breakfast 5:30am-10:30am daily, dinner from 6pm-10pm daily.
