Chiapa's cuisine combines quite distinct flavors. It produces a wide range of tamales, made from leaves, toropintos, corn, maize dough and rattlepod. Cacao is used in pozol, tazcalate and several types of chocolate. Roast suckling pig is traditionally eaten in the Central region, crayfish on the Coast while San Cristobal de las Casa is famous for tazajo, chimol and smoked leg of pork. Comitán is famous for its pork sausage, shuti broth and rattlepod soup with maize dumplings in Teopisca. Other well-known dishes include totopos and beef stew. Palenque has restaurants serving all these and other traditional Chiapas dishes.
