The Balmoral, Dining
Hadrian's
Hadrian’s is the Balmoral’s chic and stylish Brasserie which serves delicious cuisine in an informal ambience. Executive Chef Jeff Bland and Head Chef Peter Fleming have created a cosmopolitan menu offering a mix of Scottish dishes and innovative international cuisine, using only the best of seasonal and regional products. The Brasserie’s stylish and fresh interior has a distinct 1930s Art Deco Influence, with walnut floors and a palette of lime plus a splash of African violet, designed by Olga Polizzi. The combination of colors was inspired by the natural landscapes of Edinburgh, taking the Salisbury Crags, sea and sky as influences. Hadrian’s and the Balmoral Bar have regular monthly offers on wines by the glass and set price menus.
Bollinger Bar at Palm Court
As Scotland’s only Bollinger Bar, the Bollinger Bar at Palm Court is the ultimate Champagne Bar and a hot-spot for guests and Edinburgh locals alike.
The Bollinger Bar is known for offering guests a sample of the finer things in life, from an extensive range of single malt whiskies and vintage champagne to innovative cocktails, including a range of non-alcoholic cocktails and the luxurious combination of Oysters and Bollinger Champagne.
The Balmoral Bar
Edinburgh’s most elegant and stylish bar, located within Edinburgh’s most prestigious address.
Formerly known as NB’s, The Balmoral Bar has been transformed by The Rocco Forte Collection’s Director of Design – Olga Polizzi. The new look she has gone for is chic and modern – with plush purple velvet and vibrant moss-green leather chairs and banquettes, complemented by her signature style natural fabrics such as linen and tweed in warm Scottish tones.
The contemporary bar is the ultimate in bespoke bar design and provides a stunning focus with backlit acetates individually designed by Austrian artist Hubertus Hohenlohe creating a striking sense of theatre. The modern, but chilled-out background music, perfect for lounging, is delivered through a state of the art Bose sound system.
The focus of the bar menu is on originality and classics, with a twist. The cocktails are shaken and stirred to perfection, using only the finest ingredients. The menu features a collection of innovative signature cocktails which change regularly, using fresh and seasonal ingredients such as the Citrus Cosmopolitan with Blueberry Juice and the Apple and Pear Mojito. In addition, the bar offers a fine selection of vintage champagnes, single malt whiskies and different international and local brews.
The team at The Balmoral Bar have also developed a first of its kind, The Cocktail Tasting Menu. Derived from the idea of Michelin starred chefs giving the guest a sampling of the finest and most seasonal of ingredients, here it has been adapted in liquid form. Since its inception, it has been very well received and is suitable for all types of occasions.
The Drawing Room
he newly refurbished Drawing Room is an ideal spot for guests and visitors who wish to enjoy coffee over the morning paper in a chic corner of the hotel, or simply to drop off shopping bags and meet friends for a cosy chat over Afternoon Tea or a glass of Champagne. Whilst retaining The Balmoral's love for glamorous surroundings and stylish design, this room is, above all, very comfortable and relaxing with views of Edinburgh's most famous street - Princes Street.
