The Ocean Villas Each Villa offers a private patio area for intimate dining, conversation and relaxation, and most offer fireplaces. In-room Dining Paired with a Wine Spectator "Best of Award of Excellence" wine list, you can enjoy fine dining in the luxury of your room. Catering Executive Chef Vaughan Mabee artfully prepares a California-fresh menu using only the freshest ingredients. Guests enjoy seasonal dishes such as the White Asparagus Veloute with Fresh Diver Scallop, Royal Miyagi Oyster with Melted Leeks, Japanese Kobe and Sky Bouillabaisse. In addition to the a la carte menu, Chef Vaughan offers a 5-course "tasting" menu, paired with wines hand selected by the sommelier. The Sky Room wine list features over 1,000 wines and has consistently received the honor "Best of Award of Excellence" by the Wine Spectator. The restaurant features Le Verre de Vin, a state of the art preservation system that ensures that each glass of wine tastes as fresh as the moment it was opened, and allows the sommelier to offer exceptional wines by the glass including the Far Niente Chardonnay, Heitz Trailside Vineyard Cabernet, and Walnut Creek Wineworks Reserve Pinot Noir.
