Hotel Martinez Dining
La Palme d'Or
This gastronomic restaurant, opened in 1985, has joined the highly coveted circle of the best restaurants in France. Here nothing has been overlooked, not even the valet parking service, which makes access to La Palme d'Or effortless and contributes to the relaxation and comfort of customers. In a short space of time, Chef Christian Willer, the creator of La Palme d'Or, together with Christian Sinicropi the Executive Chef, have brought the restaurant to the height of French cuisine where its growing international reputation has never flagged.
Located on the first floor, on the 'balcony' of the Croisette, the restaurant was redesigned by Sybille de Margerie in 2003 and offers a splendid view of the bay of Cannes. Once through the majestic glass doors, a new world dedicated to cinema opens up to customers. The entrance has a natural feel being clad with cut stone, and leads on to a wine cellar and smoking lounge. The lighting and colour set the tone of this new atmosphere where materials are cleverly matched to give the restaurant a magical feel. The mixture of natural woods, such as marsh wood, sycamore and teak, entices guests into an atmosphere that encourages escapism and relaxation. The warmth of the setting is expressed through deep colours, including orange and plum with touches of gold and beige, all enhanced by soft lighting.
A cinema film is laid out on the carpet of the lounge through to the dining room and stylized palms are sprinkled over the floor and inlaid in glass in the walls. The décor is gold in colour, with a bronze statue, and of course black and white photos of the Festival. Finally, the teak wood patio of the restaurant encourages self-indulgence with chocolate-tinted plaited armchairs, and sand coloured roll-down blinds, everything is there to encourage guests to get away from it all and give into the savors concocted by Christian Sinicropi.
Portrait of the Chefs
Creator of La Palme d'Or restaurant, Christian Willer was born in Alsace and raised by wine-growers. He has acquired solid experience as a chef, started in the Doubs and continued in Basle and Paris ('Le Français', 'Maxim's', 'Prunier', 'Le Fouquet's') but also in La Baule ('Castel Marie-Louise' and 'Hermitage'), Courchevel ('Le Carlina'), Les Bézards ('Auberge des Templiers'), Monaco ('Hotel de Paris') with spells in Italy, Greece and Florida. This seasoned chef rapidly  made his mark at the Hotel Martinez, enjoying free rein in his culinary creativity and was quickly rewarded with success. It was at the Hotel Martinez that, in addition to his other awards, Christian Willer obtained his first Michelin star in 1986, then his second in 1991, not forgetting a 17/20 score in GaultMillau. Known and recognized, his expertise has become sought after over the years. Owing to his international reputation, Christian Willer, an ambassador of French haute cuisine, organised gastronomic events abroad in Caracas (Venezuela), Tokyo and Osaka (Japan), Miami (Florida), and Singapore.
Christian Willer has selected Christian Sinicropi to be his successor and, at his side, Christian Sinicropi reveals his talents and creativity. He started his career in 1990 at the Palme d'Or and continued in such well-known establishments as 'la Côte' au Carlton, the 'Hotel du Palais' in Biarritz, the 'La Belle Otéro' in Cannes, the 'Restaurant Buerehisel' in Strasbourg, and the 'Louis XV' in Monaco before going back to his roots in 2001. Other skills are brought into play, such as that of André Toscano, chef-sommelier who is unequalled in his skill for marrying fine and local wines with the meat and fish dishes and sumptuous desserts that have forged the reputation of the restaurant and hotel.
Le Relais Martinez
The other restaurant in the hotel is defined as a chic and relaxed place. Its décor harmonizes clear wood paneling with beige and ivory checked fabrics to create an understated, refined atmosphere. This very relaxing place is located next to the 'Amiral' Piano Bar and extends to the patio right through to the poolside. Here, Christophe Patenotte serves more typically Mediterranean cuisine, rich and varied, focusing on fresh seafood and local produce. Throughout the year, several themed evenings are organized at the Relais Martinez as well as an attractive Culinary Program: a genuine world tour of flavours inviting guests to discover geographically varied dishes and various original themed set menus adapted to events in the year (Valentine's Day, Christmas Day, Easter and new seasons to name a few).
L'Amiral Bar
Not a year goes by without the Amiral displaying yet more medals. The Hotel Martinez barmen have won highly prestigious awards - several French championship titles, and even a world championship. Indeed, the bar's dream-team has more than twenty trophies. They play the Shaker and compose highly original cocktails. Drinks at the Amiral are not only unusual, they are also fun. Music is provided by Jimmy McKissic, a Star Pianist on the French Riviera who has even played Carnegie Hall in New York. If the bar at the Hotel Martinez has become an institution, it is thanks to the warmth of its team and the joyous and friendly ambience. The dozens of metal plaques fixed around the bar are proof of this; they are engraved with the words 'place de' followed by the names of a few regular clients.
Zplage Beach Restaurant
A few steps away, on the other side of the Croisette, Zplage boasts not only a huge beach area but also an open-air bar-restaurant where the emphasis is on the freshest ingredients that go into the cocktails, salads and variety of dishes. In the kitchens, Frédéric Greffet has concocted menus featuring flavours from the Hinterland and elsewhere in the world. The healthy aspect of his cuisine is evident with fish and meat cooked in a clay oven that really brings out the flavours. During the summer, fireworks and colourful dinners add a special touch to any soirée.

The Kid's Club is open every day during the summer holidays from 2pm to 6pm. Entry is free but is reserved exclusively to children between 4 and 12 staying at the hotel.
